Chicken Gumbo

Ingredients

• Young chicken, jointed as for fricassee, 1
• Okra, chopped fine, 1 quart
• Tomatoes, sliced, 1 quart
• Onion, finely minced, 1
• Flour, 1 tablespoon
• Butter, 2 tablespoons

Method

   Place the butter, flour, and onion in a pan and slightly brown.

   Add the tomatoes and okra slowly, letting these boil for 15 minutes; then add the chicken, which has been previously boiled, and let these cook together until the okra is dissolved.
