Chicken en Casserole

Ingredients

• 3 tblsps. butter
• a small onion
• half a carrot
• 1½ cups of stock or boiling water
• the juice of a lemon
• 2 bay leaves

Method

   Cook butter, onion, and carrot.

   Add chicken and brown.

   Add stock, lemon juice, and bay leaves.

   Bake for 1.5 hours, add mushrooms, and serve.
