Chicken Croquettes

Ingredients

• Mince chicken as fine as possible
• one small onion chopped very fine
• one set of brains
• one large tablespoonful of butter
• two large tablespoonfuls of flour
• one tumbler of milk

Method

   Mix minced chicken with onion, brains, butter, flour, and milk, boil, and stir.

   Cool the mixture, shape into balls, roll in breadcrumbs, chill, then roll in egg and breadcrumbs again before frying.
