Cheese Straws

Ingredients

• 1 oz. Cheddar cheese (grated)
• 2 ozs. flour
• 2 ozs. Parmessan cheese (grated)
• A little salt and cayenne
• 2 ozs. butter

Method

   Rub all ingredients together on a board.

   Mix with yolk of egg and a few drops of lemon juice to form a stiff paste.

   Roll out to 5 inches wide and 1/8 inch thick.

   Cut into strips and place on a greased baking sheet.

   Bake in a slow oven for 5-10 minutes until pale brown.

   Let cool on the baking sheet.
