Cheese Straws

Ingredients

• Quarter of a pound of Flour
• Two ounces of Butter
• One and a half ounces of Parmesan Cheese
• Yolk of an Egg
• Salt
• Cold Water.

Method

   Rub the butter into the flour, add the salt and grated cheese.

   Mix to a stiff paste with the egg and a little cold water.

   Roll out on a floured board into a strip four inches wide and a quarter of an inch thick.

   Cut into straws, place on a floured tin and bake in a moderate oven.

   The straws should be served in bundles tied round with narrow ribbon.
