Cheese Souffle

Ingredients

• 3 tablespoonfuls butter
• 1/2 teaspoonful paprika
• 1/2 cupful American cheese
• 1/2 cupful bread crumbs (grated)
• 1 cupful milk
• 1 teaspoonful salt
• 4 eggs

Method

   Melt the butter in a double-boiler top, add the cheese, paprika, crumbs, salt, and milk, and cook until the cheese has melted.

   Separate the eggs, beat the yolks until lemon-colored, add the crumb mixture, and fold into the whipped egg whites.

   Transfer to a lightly buttered baking dish and bake for about thirty-five minutes in a moderate oven.
