Cheese Souffle

Ingredients

• 2 tbs. butter
• tbs. flour
• 3/4 c. grated cheese
• 5 ¢. scalded milk
• 5 tap. salt
• Few grains cayenne
• Yolks 3 eggs
• Whites 3 eggs

Method

   Melt butter, add flour and when well mixed, add gradually scalded milk.

   Then add salt, cayenne, and cheese.

   Remove from fire.

   Add yolks of eggs beaten until lemon colored.

   Cool mixture and cut and fold in whites of eggs beaten until stiff and dry.

   Pour in buttered baking dish and bake for 20 minutes in slow oven.

   Serve at once with white sauce.
