Cabbage Soup with Stock

Ingredients

• one sound white cabbage
• a quart of water
• a quart of beef broth
• salt to taste
• pepper to taste
• a lump of butter
• two small lumps of sugar

Method

   Wash and trim the cabbage, chop fine, and put it in a stew-pan with a quart of water.

   Boil until tender.

   Add a quart of beef broth, salt, and pepper, and boil once more.

   Before serving, stir in a lump of butter and two small lumps of sugar.

   Serve hot.
