Cabbage S.-la-Mode

Ingredients

• one head of cabbage
• one-quarter pound of cold chicken
• two ounces of cold pork
• one-quarter pound of rice
• three ounces of butter
• one-half ounce of flour
• one pint of brown stock
• one teaspoonful of salt
• one teaspoonful of pepper
• one Bermuda onion

Method

1. 1

   Boil cabbage for 15 minutes.

   Cool, chop chicken, pork, and onion, mix with rice, salt, and pepper.

   Insert mixture into cabbage leaves, bind with twine, fry in butter until brown.

   Mix flour with stock, pour over cabbage, and stew slowly for 3 hours.

   Serve with sauce.
