Brown sauce or gravy - Moisten the meat and onion with a little brown sauce from the supply made to serve with the roly. . Make the pastry, roll out and spread with mince. - Roll up, moistening and sealing the edges, put inva greased jam jar and steam for 2 to 3 hours. (It could be wrapped in a greased paper and steamed or put into a floured cloth and boiled.) iW N we Brown Sauce 14 oz. dripping I onion Root vegetable 3 pt. water 13 oz. flour 1. Fry the onion in the dripping, add the other vegetable cut neatly, Fry a little and add the flour. 2. Stir in the water. Bring to boiling point and leave to cook very slowly for 4 hour. 3. Do not strain but pour over the roly when it is cooked. Potatoes 2 /b. steamed in the skins Cut a ribbon of peel from the potatoes and steam over the roly poly for about 40 minutes. Celery—2 heads 1. Wash weil, cut into even lengths, and cook in boiling salted water for about 1 hour. 2. Lift celery from pan. Cream 1 tablespoonful of flour with 1 tablespoonful of milk and stir in 4 pt. of the liquor in which the celery has been cooked. Return to the pan and boil. Add pepper. 3. Pour this sauce over the celery. FRIED HERRINGS 1. Clean the herrings and dip each into medium oatmeal. 2. Heat 2 oz. dripping until it smokes. 3. Fry the herrings on both sides and serve very hot. This will take about ro minutes. SATURDAY SAVOURY PUDDING 12 og. crusts of bread or stale bread 4 oz. suet Salt and pepper 1 1b. onions 3 tablespoonfuls medium oatmeal 2 pt. milk I egg 2 teaspoonfuls dried sage . Soak the crusts in water for 3 hours before using, squeeze as dry as possible. . Chop the onions and suet finely. . Add all the dry ingredients to the soaked crusts and mix well; season carefully. . Beat the egg, add milk and pour in to the mixture. . Melt 1 oz. fat in a shallow baking tin. Put the pudding into the tin and cook until well browned (about an hour like a bread pudding). . Remove from the oven and allow the pudding to stand for a few minutes. . Cut into squares and dish carefully. Serve with brown sauce.
