Brown Bread Pudding

Ingredients

• Brown Bread
• 1 Lemon
• half a teaspoonful of Essence of Vanilla
• 3 ozs, of Castor Sugar
• 1 gill of Milk
• 1 gill of Cream
• 4 Eggs

Method

   Cut crust off stale brown loaf and rub through a sieve.

   Boil milk, mix with bread-crumbs, lemon rind, and vanilla.

   Add whipped cream and yolks of eggs.

   Stir in beaten egg whites.

   Butter a pudding mould, pour in mixture, cover with buttered paper, and steam for one hour and a quarter.
