Breaded Spring Chicken

Ingredients

• Cut spring chicken into pieces
• in grated bread crumbs
• seasoned with minced parsley
• pepper
• salt
• lay bits of butter over
• add a little water
• pour a teacupful of cream
• two tablespoonfuls of grated bread crumbs

Method

   Dip chicken pieces in beaten egg, then in seasoned bread crumbs.

   Place in a pan, add butter and water, and bake slowly, basting often.

   When done, stir cream and bread crumbs into the pan and serve in a sauce bowl.

   Garnish with parsley.
