Boiled Salted Cod with Egg Sauce, excepting that ilb. of melted maitre-d’liotel butter is used instead of the egg sauce. Boiled Salted Cod -with Brown Butter. — Prepare and cook the fish as for Boiled Salted Cod (No. 1). When it is done, put it on a dish, pour over 1 pint of brown butter, and garnish with fried parsley. Boiled Salted Cod with Egg1 Sauce. — (1) Chop as fine as possible lib. of freshly-salted Cod that has been soaked, boiled, and allowed to get cold. Mix 1 teaspoonful of corn- flour with 1 teacupful of milk till smooth, and stir it over the fire till it thickens ; add to this £lb. of mashed potatoes rubbed through a sieve, 2oz. of butter, 1 dessert-spoonful of chopped parsley, two well-beaten eggs, and pepper to taste
