Boiled Cowheel

Ingredients

• One Cowheel
• Water or Milk to cover it
• Two tablespoonfuls of Flour
• Chopped Onions
• Pepper and Salt
• chopped Parsley

Method

   Cut up the cowheel and wash it well.

   Put it into a saucepan with enough milk or water to cover it, add chopped onions, pepper, and salt, and let it boil for one hour.

   Mix flour with a little cold water and stir it into the cowheel to thicken the broth; let it cook for ten minutes.

   Just before serving, stir in some chopped parsley.
