Beefsteak and Oysters

Ingredients

• one quart of oysters
• three ounces of butter
• a tablespoonful of sifted flour

Method

   Broil the steak as usual.

   In a stewpan, heat the oysters with a little of their liquor until boiling.

   Skim off any foam, stir in the butter mixed with flour, and let it boil for one minute until thickened.

   Pour over the steak and serve hot.
