Beef Steak Pudding

Ingredients

• Two pounds of Steak
• Eight ounces of Suet
• One pound of Flour
• Two ounces of Kidney
• One Onion
• Parsley
• Pepper
• Salt

Method

   Chop suet and add to flour with a pinch of salt.

   Mix with cold water to make a paste, cut off a quarter for the lid.

   Roll out and line a greased basin with paste.

   Cut steak into thin slices, dip in seasoned flour, roll kidney in each slice, place in basin.

   Sprinkle with onion and parsley, pour in stock or water.

6. 6

   Cover with suet pastry lid and cloth, tie with string.

   Boil for three hours.
