Beef Fillets with Horse-radish Sauce

Ingredients

• 1 lb. Fillet of Beef
• 1 gill of whipped Cream
• 2 ozs. grated Horse-radish
• mixed Mustard teaspoonful
• 1 tablespoonful White Vinegar
• 2 ozs. Butter

Method

   Sauté fillets in butter, glaze them, and arrange on mashed potatoes with horse-radish sauce in the center and brown sauce around.

   Whip cream stiffly, add horse-radish, mustard, vinegar, and seasoning.
