Beef è la Mode Cut and trim neatly the under part of a round of beef and 8oak it in vinegar and spices for three or four hours. Prepare the yinegar as f ollows : Chop one onion very fine, add a little salt, pepper, dry mustard, and a few whole cloves. Mix ali with one cup of vinegar and boil for five minutes. Tum the meat frequently. Lard it with pieces of salt pork cut about one-quarter of an inch square and in strips as long as the meat 18 thick. Brown three onions, one carrot, and one tumip, ali sliced, in drippings. Place them in a pan. Brown the meat in the same way^^asten a cloth round the beef, so as to keep it a good shape, then place it in the pan on a perforated tin a little hìgher than the bottom of the pan. Cover about half with boil- ing water, add a small bag of herbs
