Bean Soup

Ingredients

• 1 quart of dried beans
• ½ pound of fat salt pork

Method

1. 1

   Pick over beans in cold water, bring to a boil and drain off the water.

   Repeat this twice using boiling water, then boil for 5 hours.

   Season just before serving, pass through a colander, rubbing all the thick part through with a wooden spoon.
