Balkan Sauce

Ingredients

• a slice of raw ham
• one wineglassful of white wine
• one wineglassful of stock
• one mushroom
• a small bunch of herbs
• a sprinkling of cumin
• a sprinkling of pepper

Method

   Put ham, wine, stock, mushroom, herbs, cumin, and pepper in a saucepan.

   Reduce until half the quantity remains, strain, and mix with a butter-flour mixture.

   Add mutton and vegetables, heat without boiling.
