Baked Fish

Ingredients

• the fish has been properly cleaned and rinsed
• rub well inside with salt
• rub well inside with pepper
• stuff the fish with a breach stuffing, or a delicate forcemeat
• dredge well with flour

Method

   Wipe the fish dry with a cloth and rub well inside with salt and pepper.

   Stuff the fish with a breach stuffing or delicate forcemeat.

   Insert skewers, sew or wind with a cord to keep it in form.

   Dredge well with salt, pepper, and flour.

   Place the fish on a trivet, perforated tin sheet, or a large tin plate set into the baking pan.
