Baked Fish

Ingredients

• the fish
• a half cup good stock
• a small piece butter
• a large pinch flour
• the vegetables, etc.

Method

   Roll the fish in oiled white paper and bake in a moderate oven for half an hour.

   Open the paper, place the fish on a dish, and keep warm.

   Melt butter, add flour, stock, and vegetables.

   Boil the sauce for five minutes, add salt if needed, strain, skim, and pour over the fish before serving.
