Apple Meringue

Ingredients

• Six large apples
• 4 oz. of butter
• \ lb. castor sugar
• 3 whites of eggs

Method

1. 1

   Peel and core the apples, put them on to stew with the butter and half of the sugar; allow them to cook thoroughly.

   When done, dish in a heap.

   Whip the whites to a stiff froth with the other half of the castor sugar, and spread over the apples.

   Put in the oven to firm.

   It must not brown.
