Apple Fritters

Ingredients

• Prepare a batter as directed in page 186.
• Apples.
• Pounded Loaf-Sugar.
• Hot Fat.

Method

   Peel the apples, preferably Ribston or Blenheim pippins.

   Remove the core and cut the apples into slices of about three-eighths of an inch.

   Roll in pounded loaf-sugar, dip into frying batter, and fry in hot fat until yellow and crisp.

   Remove onto a cloth and sprinkle with pounded loaf-sugar.

    Arrange in a heap on a hot napkin and serve.
