Ingredients

• a quart-measure of juicy tart apples
• a teacup of hot water
• a pint of sour milk
• a piece of butter the size of a walnut
• a teaspoonful of soda
• butter, sugar and cream to serve

Method

   Peel and slice the apples, place in a buttered dish, and pour hot water over them.

   Make a stiff batter with sour milk, salt, butter, and flour, adding soda last.
