Anchovy Sandwich a la Servietto

Ingredients

• One tablespoon butter
• yolks of two eggs
• two tablespoons milk
• one tablespoon cream
• four olives chopped very fine
• one olive for each individual piece
• pepper
• salt
• four chopped anchovies
• one tablespoon mushroom ketchup
• speck of anchovy paste

Method

   Cut bread in heart shapes and butter.

   Mix yolks with milk and cream; add chopped olives, anchovies, and mushroom ketchup.

   Cook in butter for two or three minutes; put on bread and let cool.

   Garnish with a stoned olive filled with whipped cream flavored with anchovy paste.

   Serve before the soup.
