An Indian Curry

Ingredients

• 1 oz. butter
• 1 small onion
• 1 apple
• 1 lemon
• i cocoa-nut
• 1 teaspoonful chutney
• 4 pint good stock
• 1 lb. cooked fowl, rabbit, or veal
• 1 dessert spoonful curry powder
• 1 teaspoonful rice flour

Method

1. 1

   Melt butter in an iron saucepan, prepare and chop onion and apple, fry together for 5 minutes.

   Grate cocoa-nut, mix curry powder and rice flour with milk from cocoa-nut and lemon juice, add stock, pour into saucepan, stir until boiling, then add cocoa-nut, chutney, and meat, simmer for 15 minutes.

   Just before serving, add cream and salt.
