Amber Pudding

Ingredients

• 6 apples
• 3 ozs. of moist sugar
• 1 lemon
• 2 ozs. of butter
• 3 eggs
• Puff paste

Method

   Peel and slice apples, cook with sugar and butter.

   Grate lemon rind and add juice.

   Stew until tender, then sieve.

   Mix with egg yolks, line a pie dish with puff paste, pour in mixture, bake for 20 minutes, top with whipped egg whites and sugar, then bake until brown.
