Amber Pudding

Ingredients

• 6 apples
• 2 oz. butter
• 1 lemon
• 2 oz. sugar
• 2 eggs
• pastry

Method

   Peel, core, and slice the apples, put them in an earthenware jar to stew with the juice and rind of a lemon and the butter.

   When tender, rub through a sieve and stir in the yolks of the eggs.

   Line a pie-dish with pastry, pour in the mixture, and bake in a quick oven for about twenty minutes.

   Beat the whites of the eggs with a little sugar and pile on top, decorate with cherries and dried fruits, and return to the oven to colour the meringue.
