Almond Macaroons, No. 2

Ingredients

• 2 eggs (whites)
• 1/2 lb sweet almonds (shelled)
• 1 coffee cupful white sugar

Method

   Blanch the almonds, and pound them to a paste; add the sugar and the well beaten whites of eggs.

   Work the mixture together with the back of a spoon.

   Then roll with the hands into balls the size of a nutmeg; flatten slightly, dust fine sugar over the top, and lay them on a piece of writing paper at least an inch apart.

   Bake in a warm oven a light brown.
