Ale with Honey

Ingredients

• fourty Gallons of small Ale
• five Gallons of Honey
• ten Gallons of it

Method

   When the Ale is warm, take out ten gallons and mix with honey, stirring well.

   Cover and let it cool.

   Then, take the remaining thirty gallons of warm Ale, tun it up with barm, and put it into a vessel.

   Make holes in the barrel to allow foulness to purge, then close them when adding the honey mixture.

   Warm the honey solution before adding it to ensure proper fermentation.
