2% cups stewed dried apples (sweeten to taste) 3 t. soda 1 cup butter or other shortening 1 cup nuts 1 cup wine or grape juice 4 cups flour sifted 5 times with soda and spices 3 t. spices 2 cups sugar 1 cup raisinsApple Sauce Cake Cream butter and sugar; add alter- nately flour and liquid; add apples, nuts, and raisins. Mix well. Turn into floured pan; bake until well done in oven 300 F. Measure, add % cup sugar and sift 4 times. Beat egg whites and salt until foamy. Add cream of tartar. Continue beating until stiff enough to hold in peaks. Add remaining cup of sugar, 2 T. ata time beating after each addition until sugar is just blended. Fold in flavor- ing. Sift about % cup flour over the mixture and fold in lightly; repeat un- til flour is used. Turn into ungreased 10-inch tube pan. Cut through lightly. Bake in moderate oven (375 F.) 30 or 35 minutes. Remove and invert pan 1 hour or until cake is cold.
