Cream shortening and sugar. Add egg and water. Beat thor- oughly. Add flour and baking powder. Mix well and chill. Roll very thin, cut into squares and sprinkle with sugar and cinnamon. Place two or three blanched almonds on top and bake on greased baking sheets ten minutes in a moderate oven. (350*' F.). Grold CcxDkies 1 cup sugar yi cup shortening 4 egg yolks iK cups flovu* 2 teaspoons baking p>owder i teaspoon vanilla yi teaspoon salt Cream shortening. Add salt and sugar and mix imtil well blended. Add egg yolks and beat well. MLx baking powder with RECIPES 173 flour. Combine mixtures. Add vanilla. Mix thoroughly and chill. Roll into balls the size of a walnut. Then roll in a mixture of sugar and cinnamon, or ground nuts. Bake on greased baking sheets three inches apart in moderate oven (350° F.) fifteen minutes. Cocoanut Kisses I pound shredded cocoanut K pound confectioners' sugar y^ cup flour I teaspoon vanilla 4 egg whites (unbeaten) Mix the cocoanut, flour, and sugar. Add vanilla and whites of eggs. Mix thoroughly. Roll into balls size of a walnut. Bake on greased baking sheet in a moderate oven (350° F.) fifteen minutes. Kisses 3 egg whites i teaspoon vanilla 2yi cups granulated sugar Beat egg whites until stiff. Fold in the sugar. Add vanilla. Drop from a teaspoon onto waxed paper. Bake on wooden board until firm and dry. This will take thirty minutes in a slow oven (300° F.-325'* F.). One-quarter cup cocoanut or one square of melted chocolate may be added if desired. Bachelor Buttons yi cup butter 2 eggs 2% cups flour 2 teaspoons baking powder xyi cups sugar i teaspoon vanilla Mix baking powder and flour. Cream butter until soft and smooth. Add flour mixture. Stir well. Beat eggs until light. Add vanilla and sugar. Add to first mixture. Mix thoroughly. Chill. Drop from a spoon onto greased baking sheets. Bake ten minutes in a moderately hot oven (375° F.). Each cookie may be topped with a raisin or nut meat before baking if desired. CHAPTER XVII Desserts Apple Dessert 2 cups flour }i cup shortening 3 teaspoons baking powder i cup niilk ^2 teaspoon salt i egg 1 tablespoon sugar i teaspoon vanilla 6 apples Sift flour and baking powder. Cut in shortening. Add salt and sugar. Add milk, vanilla, and beaten egg. Mix well. Drop tablespoon of batter into well-greased muffin tins. Peel and cut apples in half. Remove core. Press apples down into batter. Cover with sugar and cinnamon. Bake in hot oven (400° F.) twenty-five minutes. Serve hot with ice cream or whipped cream. Apple Sponge Grease an eight by ten-inch cake tin generously. Fill the bottom one inch deep with apples — sliced as for pie. Put one- half pound brown sugar over the apples. Cover apples with a batter made from: 3 eggs (well beaten) Grated rind of i lemon 2 tablespoons water ^ cup flour }4 cup sugar i teaspoon baking powder Bake forty minutes in a moderate oven (350° F.). Serve with whipped cream. Garnish with cherries. Apple Dumpling Roll pie crust not too thin. Cut in squares to fit apples. Pare and core medium apples and place an apple in each square. Fill core with sugar and cinnamon. Dot with butter. Fold points of pastry over apples. Seal edges well. Place in pan. Pour water to which sugar, butter, and cinnamon have been added 174 RECIPES 17s
