Substitute 1 cupful of strong liquid coffee for the milk in the gingerbread recipes. Sprinkle a little powdered cinnamon and sugar over the batter just before placing it in the oven to bake. Chocolate Gingerbread Omit Yo cupful of flour in the gingerbread recipe and use % cupful of cocoa instead. Cover with a Mocha icing. Fruit Gingerbread Add 1 cupful of chopped nuts, raisins, currants, dates or cooked prunes to the gingerbread batter.
