with fillets of beef Tournedos or chateau-briant.

I onion or 4 shallots, 3 gherkins (chopped), i table-
spoonful chopped capers, i gill vinegar, i teaspoonful
anchovy essence, i bay-leaf, i sprig of thyme, f pint
