Bost's circles of the Pres- byterian Church have attempted to catch and keep some of the originality and appeal of dishes served in the homes of the village, and to preserve some of those for which older hostesses have a gentle fame. All the modest cooks wish to disclaim originating the recipes they furnished. Their signa- ture attests in most cases, they say, their successful experience with the recipe and their approval of it. In a book of this size, no real effort could be made at completeness: therefore, the editors have tried to be selective and to include as great a variety of types as possible.
