Wash and scrub the potatoes, dry them, and bake them in the
oven, cut them into halves, and scoop out the mealy parts. Poach

each, mix the remainder of sauce with half the cheese, cover with the
sauce, sprinkle with bread-crumbs and grated cheese, divide the butter
