Zweiback

Ingredients

• two good sized potatoes
• one pint of potato water
• two heaping tablespoons of sugar
• a cake of Fleischman's yeast
• 1 cup milk
• Yi teaspoon soda
• Yi pound butter
• 1 cup sugar
• 1 teaspoon salt
• 2 well beaten eggs
• Add flour to make a soft dough

Method

   In the evening, cook the potatoes to make potato water.

   When cool, add sugar and dissolved yeast.

   Let stand overnight.

   The next morning, add milk, soda, butter, sugar, salt, and eggs.

   Add flour to make a soft dough, let rise until double, knead into loaves, let rise again, and bake in a hot oven for one hour.

   When baked and cool, cut into slices and bake to a golden brown.
