Yellow Mountain Cake

Ingredients

• three-fourths cupful of butter
• two cupfuls of powdered sugar
• four cupfuls of flour
• one cupful of sweet milk
• five eggs beaten separately
• one tea-spoonful of soda
• two tea-spoonfuls of cream of tartar

Method

   Stir thoroughly through the flour, cream butter, sugar, and yolks well together, add the milk and flour, beat well, then stir the whites through lightly.

   Bake in jelly-cake tins.

   For filling, take the whites of three eggs beaten to a stiff froth, three cupfuls of sugar stirred well into the whites, with a pinch of tartaric acid.

   Spread this between the cakes.
