Woodcock Toast

Ingredients

• £ lb. poultry or game livers
• 1 or 2 anchovies
• oz. butter
• 1 table-sp. cream
• 1 yolk of egg
• Pepper
• Salt
• Pickles
• Hot buttered toast

Method

   Wash the livers carefully, removing the gall and any green parts; drain and dry them.

   Pound in a mortar with the anchovies and butter until smooth.

   Optionally, rub through a sieve.

   Add the yolk of egg and cream, season with pepper and salt.

   Heat gently in a saucepan without boiling.

6. 6

   Arrange on hot buttered toast, decorate with pickled walnut and strips of red chilli.

   Serve hot.
