White Mountain Cake

Ingredients

• 3/4 cup butter
• 2 cups sugar
• 3 cups sifted flour
• 2tsp. baking powder
• + tsp. salt
• l tsp. lemon extract
• 1 cup skim milk
• 6 egg whites, beaten stiff, not dry

Method

   Cream butter and sugar until light and fluffy.

   Sift dry ingredients three times, add alternately with milk to creamed mixture.

   Fold in egg whites.

   Bake in a greased loaf pan about an hour at 350 degrees.
