Welsh Rarebit - No. 1

Ingredients

• 3 parts of butter
• 1 coffeecup of grated cheese
• 3 tablespoonfuls of beer
• 1 teaspoonful of prepared English mustard
• salt to taste
• two well beaten eggs

Method

   Melt butter in a chafing-dish, then add cheese, beer, mustard, and salt.

   Stir constantly.

   When melted, add beaten eggs, cook one minute, and serve on hot buttered toast.
