Victoria Sandwich

Ingredients

• 2 eggs.
• 3 ozs. butter.
• 4 ozs. sugar.
• 5 ozs. self-raising flour.
• or 5 ozs. plain flour and 1 small teaspoonful of baking powder.

Method

1. 1

   Cream together the butter and sugar.

   Beat in the eggs one at a time.

   Sift in the flour (and baking powder if using plain flour).

   Stir lightly.

   Bake in two greased 7-inch sandwich tins for 15 minutes, then reverse and bake for another 10-15 minutes.
