Vegetable Soup

Ingredients

• 1 quart brown stock, cleared or not cleared
• 1 cup diced vegetables, raw or cooked
• Salt
• Pepper

Method

   For a clear soup, clarify stock and add vegetables.

   If using cooked vegetables, boil for a few minutes.

   If using raw, simmer until tender, adding boiling water if necessary.

   Season and serve.
