Urney Pudding

Ingredients

• 2 Eggs
• Flour.
• Butter.
• Sugar.
• Jam.
• Carbonate of Soda.

Method

   Take 2 eggs, with their weight in butter and flour, and the weight of one egg in sugar.

   Beat butter and sugar to a cream, add eggs and beat smooth.

   Add flour mixed with half a teaspoon of carbonate of soda.

   Mix until smooth, add a tablespoon of jam, pour into a buttered mould, cover with greased paper, and steam gently for an hour and a half.
