Turkish Delight

Ingredients

• 1 oz. French sheet gelatine
• 1 gill cold water
• 1 lb. granulated sugar
• 1 gill hot water
• 1 orange
• 1 lemon
• 1 wine-glassful rum
• Carmine
• Icing sugar

Method

   Dissolve the gelatine in cold water by the fire.

   In a larger saucepan, boil sugar and hot water, then strain in the gelatine.

   Simmer for 15 minutes, stirring frequently.

   Add rum, orange and lemon rind and juice, and flavour.

   Colour one portion pink with carmine.

   Pour into wetted tins about 1 inch thick, cool, turn out on icing sugar, cut into pieces, and coat with sugar.

   Store in an airtight box.
