Trout in Paper

Ingredients

• 4 or 5 small trout
• 2 oz. butter
• 1 tea-sp. chopped parsley
• 1 table-sp. chopped mushrooms
• 3 table-sps. bread-crumbs
• A squeeze of lemon juice
• 1 yolk of egg
• Seasoning

Method

   Choose small trout and clean them carefully without opening.

   Prepare a stuffing with the other ingredients, beating the butter to a cream and binding all together with the yolk of an egg.

   Fill the trout with this stuffing, wrap each in greased white paper, and place on a greased baking tin.

   Bake in a good oven, turning the fish once during cooking.

   Serve on a hot dish without removing the paper, garnished with parsley.
