Tournedos de Bceuf a la Portugaise

Ingredients

• 4 or 5 small fillets
• 1 oz. butter
• 4 or 5 stuffed tomatoes
• Croutons of bread
• 1 glass white wine
• 1 gill tomato sauce
• Seasoning
• Chopped parsley

Method

   Prepare and cook the fillets as in Recipe 1070.

   Place each fillet on a crouton, arrange stuffed tomatoes on top, and keep warm.

   Reduce wine in the saucepan, add tomato sauce, cook briefly, strain, and serve around the dish with parsley.
