Tomato Surprise Salad

Ingredients

• 6 tomatoes
• 1/2 cup mayonnaise dressing
• 1/2 cup diced cucumber
• 1/2 cup diced, cooked chicken
• 1/2 cup chopped nuts
• Garnish of truffles or walnut-meats

Method

   Select medium-sized, smooth tomatoes.

   Scald and remove skins.

   Chill.

   Scoop out the inside of the tomatoes, remove seeds from the pulp.

   Chill all ingredients, and when ready to serve, mix chicken, cucumber, tomato pulp, and nuts with mayonnaise dressing.

   Fill the tomatoes and arrange on lettuce leaves, garnishing with mayonnaise and decorating each tomato top with a slice of truffle or halves of shelled nuts.
