Tomato Rarebit

Ingredients

• 1 gill tomato pur6e
• 1 gill milk
• 1 oz. butter
• 3 oz. grated cheese
• Pepper
• Salt
• ea-sp. made mustard
• 1 egg
• 1 dessert-sp. flour
• A pinch carbonate of soda
• Hot buttered toast
• A little chopped parsley

Method

1. 1

   Melt butter in a saucepan, stir in flour, then add milk and stir until boiling.

   Add tomato purée, grated cheese, seasonings, and soda.

   Mix well, then add beaten egg and stir until hot without boiling.

   Pour over hot buttered toast, sprinkle with parsley, and serve hot.
